This deeply flavorful pasta dish is as simple as it is delicious! Indulgent, yet dairy free, this sauce will have you going back for more.

Pasta with vodka sauce is one of my all time favorite pasta dishes, but as someone who is sensitive to dairy, it was always a "special occasion" type of meal. It was either that, or pay way too much at the store for a jar of dairy free sauce. 


Now, with this dairy free recipe, I can enjoy one of my favorites any time of the year! 

Ingredients
  • 1 tbsp sunflower oil

  • 1 garlic clove, crushed

  • 2 cups high quality crushed or pureed tomatoes (we love the San Marzano brand!)

  • Pinch of sugar

  • 4 tbsp dairy free heavy cream

  • 75ml vodka

  • 2 tsp nutritional yeast

  • 1 tsp basil

  • 2 tbsp oregano

  • 1 package potato gnocchi (or other pasta of choice)

  • Salt and pepper, to taste 

Steps

Instructions

1. Add the oil and garlic to a large pan, and cook over medium heat for 1 minute un til the oil is infused

2. Pour in the crushed tomatoes, sugar, herbs/spices, and cook for 2-3 minutes, stirring occasionally

3. Add in the dairy free heavy cream and vodka, and stir until well combined 

4. Cover pan with a lid (loosely), and simmer for 20-25 minutes, stirring occasionally 

(note: keep tasting the sauce and cook until the vodka is well incorporated)

5. While sauce is simmering, bring a separate pan of salted water to a boil and add the gnocchi

6. Cook 3-5 minutes, until gnocchi floats at the top, then drain away the water 

7. Season the sauce to taste with any additional herbs/spices, and salt/pepper 

8. Add the cooked gnocchi to a bowl, top with sauce, and enjoy! 


Additional Variations: 


This sauce is delicious as is; but if you are in the mood for something different, try one of these: 


  • Cheesy: Add an extra tbsp heavy cream, and 2 extra tsp of nutritional yeast (or more to taste)

  • Spicy: Add in 2-3 tsp red chili flakes 

  • Savory: Double up on the oregano, and add in some extra basil for a true Italian flavor

  • Sensitive to acidic foods: Add in 1-2 tsp of turmeric to balance out the acid from the tomatoes 

  • Low Carb: For a lower carb option, skip the potato gnocchi and opt for a high protein/lentil based pasta noodle. This will reduce the carbs, drastically!
