This easy, delicious Vegan Tomato Soup is full of flavor and perfect for those cold winter nights. Plus, with the hidden addition of turmeric, you can feel good knowing that this soup not only tastes good, but is good for you!

Ingredients
  • 2 tablespoons vegan butter 

  • 1 tablespoon olive oil 

  • 1 medium onion, chopped (yellow preferred) 

  • 3 cloves garlic, minced 

  • 2 28oz cans whole tomatoes 

  • 1 cup vegetable broth 

  • 1 cup canned coconut cream 

  • 1 1/2 tablespoon sugar 

  • 1 tablespoon oregano 

  • 1/2 teaspoon basil 

  • 1/2 teaspoon garlic salt 

  • 1/2 teaspoon salt 

  • 1/2 teaspoon black pepper 

  • 1/2 teaspoon crushed red pepper flakes (Optional, more or less to taste) 

  • 1/2 teaspoon turmeric

Steps
  1. In a large pot, over medium heat, add the oil and butter. Let melt completely and then add in the onion. Sauté until lightly browned, about 3-5 minutes.

  2. Add the minced garlic and sauté for 1 more minute.

  3. Add the canned tomatoes (with juices), vegetable broth, and coconut cream. Break apart the tomatoes with the back of a spoon.

  4. Add sugar, oregano, basil, garlic salt, salt, black pepper, crushed red pepper, and turmeric. Mix well.

  5. Turn up heat to high and bring to a boil. Once boiling, reduce to low and simmer for 30-45 minutes.

  6. Let cool and place into a blender (or use an immersion blender). Do not fill blender more than 2/3 way full. Blend in batches if needed.

  7. Pour into bowls, serve with toasted bread (or dairy free grilled cheese....yum!) and enjoy!
