Okay, confession time... I've seen receipes for these snickers dates for years and never bought into the hype. That was, until I tried one at a local coffee shop and immediately became obsessed.

Let me tell you, these really do taste like snickers! Except, you can feel good about eating them since they are free from unnecessary additives and chemicals that come in pre-packaged food.

Ingredients
  • 10 medjool dates

  • 3 tbsp natural peanut butter

  • 1/4 cup crushed peanuts

  • 1/2 cup dairy-free dark chocolate chips

  • 1 tsp coconut oil

Steps
  1. Remove the pit from each date

  2. Fill each date with peanut butter

  3. Place dark choclate and coconut oil in a microwave safe bowl, and melt in 15 seccond increments, stirring between each. It shouldn't take more than 1-2 minutes for the chocolate to melt.

  4. Using a toothpick to hold the date together, dip each date into the melted chocolate, and use a spoon to coat the date fully

  5. Place chocolate covered date on a pan lined with parchment paper

  6. Sprinkle crushed peanuts and flaky sea salt on top

  7. Put dates in the fridge (about 30 minutes) for chocolate to set

Storage: Keep leftover dates in a sealed container in the fridge, for up to a week

Growing up in Central Texas and being someone who did not particularly enjoy eating meat, I was quickly labeled a "picky eater" as a child. But that couldn't be any further from the truth!

After experimenting with food, I discovered my love for fresh ingredients, and now I can't get enough! The farmers market is my happy place, and if I have any spare time during the week, you can almost always find me in the kitchen trying out a new recipe.

Trust me, there's nothing better than the flavors, textures, and colors of freshly made food. So, let's have some fun and try out a recipe or two!
