About the Recipe

This recipe was inspired by a fun little taco place my co-workers and I found near the office! They had an Islander taco on the menu that we all LOVED....but it was greasy. All I could think about the entire time I was eating it was - "I can make this better" - so here we are :)

This may be controversial, but growing up I never understood the hype around "Taco Tuesday". Don't worry - I get it now! But something about those greasy meat based tacos never quite got me excited. 


Fast forward, and now tacos are a staple in our house! Fresh and light ingredients, combine together with a mixture of spices to create an explosion of flavor! Forget those "meat only tacos". These tacos are packed with veggies, natural sweetness from the pinepple, and yes...."meat" (although I kept it lighter by using shrimp instead of beef). If you're looking for a fully vegan taco, feel free to substitute the shrimp for tofu.


So, here's to Taco Tuesday everyone - ENJOY!  

Ingredients
  • 1 bag small cooked shrimp, devined & tail off

  • 2 tbsp curry powder

  • 1 tsp turmeric

  • 1/2 tsp garam marsala

  • 1 cup purple cabbage, shredded

  • 1/2 cup fresh spinach, finely chopped

  • 1 yellow onion, finely chopped

  • 1 cup pineapple, finely chopped 

  • 4 tbsp vegan parmesan cheese (we love Violife)

  • 8 tortillas (flour or corn)

  • Fresh lime

Steps

Cooked Ingredients

  1. Thaw shrimp according to package & place into bowl

  2. Add in curry powder, turmeric, and garam marsala - mix well

  3. Add shrimp to a pre-heated skillet (feel free to add a small amount of avocado oil or olive oil if needed)

  4. Add in onions, 1/2 of the purple cabbage, & 1/2 of the pineapple

  5. Cook for 8-10 minutes, stir occassionally 


Garnish

  1. Add cooked shrimp mixture to warmed tortilla

  2. Top with remaining purple cabbage, spinach, and pineapple

  3. Sprinkle on vegan parmesan cheese 

  4. Finish off with a squeeze of fresh lime

  5. Enjoy! 


Optional Variations

  • For a fully vegan taco, try substituting crispy tofu! 

  • If you aren't limiting dairy, feel free to use your favorite cheese

  • While not included in this recipe, we think adding/substituting additonal veggies such as bell pepper and/or sweet potato would be delicious! Feel free to mix it up.
