Chocolate and peanut butter....is there a better match? We think not! These protein cookies are not only delicious, but they are good for you! So go ahead and have one (or two) - we won't judge!

Tired of eating those protein cookies that you buy at the store and taste like chalk? Yeah....us to! So we set out to create a recipe that not only tasted delicious, but was also good for you. 


These cookies are the perfect balance of chocolate and peanut butter - add some flakey sea salt on top, and we promise you won't be able to eat just one!

Ingredients
  • 1/2 cup vanilla protein powder (or chocolate) 

  • 1/4 cup oat flour (or whole wheat flour) 

  • 1/2 tsp baking soda 

  • 1/4 tsp salt 

  • 3 tsp cocoa powder 

  • 1 tbsp coconut oil (lightly melted) 

  • 2 large eggs 1/2 tsp vanilla 

  • 1/4 cup maple syrup 

  • 1/2 cup peanut butter 

  • 2 tbsp oat milk (or any other dairy free milk)

Steps
  1. Preheat the oven to 350 degrees F

  2. Mix the protein powder, flour, baking soda, salt, and cocoa powder together in a large bowl

  3. In a separate bowl, mix together the coconut oil, eggs, vanilla, maple syrup, and peanut butter

  4. Pour the liquid ingredients into the dry ingredients until loosely combined

  5. Add in oat milk, and continue mixing until well combined

  6. Use a spoon (or your hands) to form cookies on an oiled baking sheet (or baking sheet lined with parchment paper)

  7. Slightly flatten the tops of each cookie

  8. Bake for 10-12 minutes

  9. Enjoy!

Notes:

  • Baking on parchment paper is preferred for the best results

  • Bake for 9-10 minutes for a slightly under-baked, gooey cookie

  • Bake for 11-12 minutes for a thicker, chewy cookie

  • Store in an airtight container at room temperature for up to 5 days, in the refrigerator for up to 10 days, or freeze for up to 3 months!
