This week, I was sick. Like super sick. And as per usual, everyone was telling me to make some soup... I'd always hated soup, but that's because I hadn't made any from scratch before. Honestly, I don't know what took me so long - it's super easy to make, and oh so good!!
This soup is perfect for those that aren't big fans of chunky vegetables. The veggies are cooked in the broth, and then pureed to make a delicious (yet smooth) broth).
Gentle enough in flavor, yet packed with all the good things - this soup is sure to help you feel better!
Ingredients
8 cups vegetable broth
1 white onion, peeled and quartered
1/4 - 1/2 inch of ginger
3 medium carrots, peeled
4 celery sticks, chopped in half
6-8 garlic cloves
Salt, to taste (can omit if broth is salted)
1-2 tsp ground turmeric
1/2 package (approx. 2 cups), small shell noodles (or other small pasta of choice)
Lime wedges, to top
Steps
Add vegetable broth to a large pot, and bring to a soft boil
Add all of your vegetables, and let simmer for 25 minutes
Cook your pasta, as the broth is simmering
Carefully spoon out your vegetables (using a slotted spoon), and transfer to a blender. Add in 2 cups of the broth. Let cool, then puree until smooth.
Pour puree back into the broth, and mix to combine.
Add in ground turmeric (and any other herb/spice of choice), mix to combine, and simmer another 2-3 minutes.
Transfer pasta to a bowl, ladel broth over noodles.
Top with lime wedges, parsley, ground red pepper flakes, or other herb/spice of choice. Enjoy!
